Those of us who know and understand the value of fiber in our diets will place a high value on ground flax seed as a baking ingredient. Here are several healthy recipes that contain ground flax seed. The first recipe, crackers made of flax seed, uses both whole and ground flax seed.
The ingredients are 50 milligrams each of whole and ground flax seed (about one quarter cup,) 375 milligrams of all purpose flour (equivalent to 1 1/2 cups), 2 milligrams of baking powder (one half teaspoon), the same amount of table salt, 20 milligrams (4 teaspoons) of softened butter or margarine, and 125 milliliters (or one half cup) of skim milk. Mix both the whole and the ground flax seed in a bowl with the flour, baking power, margarine, and salt. Turn your mixer on low and mix until it is the coarse consistency of meal. Milk should be stirred in next, which creates a soft, doughy mixture.
This should be wrapped in plastic and cooled in the refrigerator for approximately ten minutes. The next step is to divide the dough into four parts and place each on a breadboard that you've floured lightly. Roll each part into a thin rectangle and cut into squares. These cracker squares should be placed on a cookie sheet (doesn't need to be greased) and baked in a 325 degree (Fahrenheit) oven for about 20 minutes.
The crackers are done when they are crips and golden in color. If you want to add some variation to these ground flax seed crackers you can add 1 tablespoon of onion soup mix (just the powder, don't add water), 1 cup of cheddar cheese that is grated, or a combination of 1 tablespoon of oregano and 1 cup of grated mozzarella cheese.
This ground flax seed recipe will produce 24 yummy, crunchy crackers. From each cracker, you'll get a healthy portion of not only fiber, but also potassium and protein.
Flax Seed Loaf
Ground flax seed is a great addition to meat loaf. To make this healthy entree, you will need two pounds of ground beef that is at least 90 percent lean, one cup of skim milk, one-half cup ground flax seed, one-half cup bread crumbs (dried), one-half cup finely chopped onion, one beaten egg, one tablespoon of Worcestershire, and one teaspoon each of black pepper, garlic powde,r and dry mustard. Additional ingredients are one-half teaspoon of celery salt, one-quarter teaspoon of thyme (ground), and one-quarter cup of ketchup.
The beef, milk, ground flax seed, bread crumbs, egg, onion, Worcestershire, pepper, garlic, mustard, celery sal,t and thyme should be combined and mixed well. This now goes into a loaf pan 9x5x3. The ketchup is spread evenly over the mixture. Bake this ground flax seed meat loaf mixture at least one hour, perhaps as much as 1 1/2 hours, at 350 degrees Fahrenheit. If you place a fork in the meat loaf and the meat comes back pink it is not done. This nutritious ground flax seed meatloaf will feed eight.
